I'm on a soup kick right now despite the high temperature outside. (Thank goodness for air conditioning.) I'm making a quinoa and vegetable soup for lunch. It smells heavenly. Can't wait to tuck in.


Edit: It WAS delicious! Topped the soup with some chopped cilantro, avocado, a bit of queso fresco, and a squeeze of lime.

We had a small amount of beef stew left, so I added some northern beans & made it soup, with a cream cheese sandwich & green onions on the side.
