I am invited to my Ecuadorian friend and she is making today "Sweet Plantain Ravioli with Chorizo and Chipotle Sauce". I can hardly wait because I never had this dish. And her delicious black strong coffee she called Ecuador’s Cubanito Coffee

I wonder if it will look something like this

That looks delicious! If she puts in the full amount of chipotles in adobo, it's gonna be pretty spicy, at least to my tongue. Hope you enjoy it and your social time.

A toasted whole wheat sandwich with healthy-style margarine & herring in wine sauce, a light & fit strawberry Greek yogurt and a mug of English breakfast tea with a teaspoon of sugar.

Yes indeed it was spicy but it tasted delicious.She is 79 years old and still such a wonderful cook

Ham sandwich, but this one, unlike yesterday, is made from a home-baked ham. Also had some baby carrots and chunks of cantaloupe.
