Lunch today we had a whole grain wrap with hummus, red onion, cucumber, tomato, avocado, cilantro, and Sriracha. Muy bueno!

Sea bass with capers and lemon sauce with steamed vegetables, a small salad, and calamari fritters for appetizer.

Worked from home, so I was able to make a nice healthy experimental lunch that turned out very tasty:

Malaysian inspired fried rice:

Leftover rice
Shallots
Oyster mushrooms
Clams
Broccoli
Yam
Tempeh
Tomato
Turmeric
Impromptu sauce made of coconut milk, soy sauce, and tamarind paste

Generously topped with spicy microgreens, broccoli sprouts, and heaps of cilantro

I don't usually post about lunch because it's usually a salad or leftovers. I was at the grocery store earlier and the sample person was giving away her last few meal kit samples, Home Chef Express, for free. She had some kind of chicken with an apricot sauce left and a prosciutto and fig mini Naan flatbreads kits left. I took the flatbreads as it sounded more interesting to me.

The kit also included red onions, mozzerella cheese and argula.

We just finished it. It was good. I don't think I'd ever pay the $17.00 cost to buy the kit but for free it was great!
