not that is my business, but like others, I have to wonder why no white wine? Nothing will really substitute for the wine except maybe Vermouth. If you don't keep wine in the house I doubt you use any other alcohol. More stock and maybe a little lemon juice will work. It still will not totally take the place of the wine. Many people I know who do not drink, still use wine for cooking. The alcohol burns off, but still leaves a great flavor.

I've used white wine vinegar diluted with some water when I didn't have any white wine in the house, but it was a small amount. Not sure how well it would turn out using a cup of it.
