When you remove the shrimp head, between the head shell and the tip of the body there is usually some gooey stuff that is quite flavorful. But what is that stuff? Is it part of the shrimp body, or is it half digested food, or something else?

Crawfish have something similar and folks suck it and smile.

Oh, horror!!! But I like The Heads!!! There could be nothing sweeter and tastier than those shrimp heads. It reminds me of tomalley, a creamy in texture and intense in flavor - like lobster concentrate. When the shells are perfectly thin crisp and the innards are ripe for the eating, the balance between the two is pretty wonderful. Yeah, I eat the crispy shells too. If they're crispy (fried with seasonings), you can crunch through them and they are delicious!

That stuff you talking about is described above and its called hepatopancreas. The color of the hepatopancreas depends on diet i- it could be orangey or greenish. Not very appealing when you look at it, but totally delicious in your mouth.

Yes I like it too, but just want to know what I am eating.

For a long time I did not think twice about eating shrimp with that black "intestine" still inside, but after I found out what it is, I try to avoid it, even though it won't kill you.

Is this the same thing as that which people call "crab cream"?

Do you think it tastes a bit like eggs?

I googled “ shrimp head stuff” and came up with this:

“ There could be nothing sweeter and tastier than those shrimp heads. For in their armored shells you will find the hepatopancreas, the digestive organ that in lobsters and crabs would be called tomalley. Shrimp hepatopancreas tastes like tomalley, only shrimpier, and more liquid-like.”

I eat it all the time. I love it. I just eat the hole head. I even the the skin, and tail. Just chew well.
