Bentstrider,

The only mobile food that I remember when I lived in the Clovis area was the one that used to roam Cannon AFB. Everyone called it the "roach coach" but at noon everyone liked it.

As I recall, around 1968/9, we had only the Taco Bell out on 7th street at Clovis if we wanted a cheap late bean burrito.

Boy! I'm really scratching my head over this one. I live in "the burbs" of Portland, the taco trucks are EVERYWHERE. There are more than a few spots where there are two right across the street from each other. I was telling my husband the other night how I wished some of them sold other cuisine because there are so many Mexican food trucks.

But in some of the towns, like the one I work in, they are limited to so many hours of operation per days, and they're not supposed to remain onsite. In the town I live in, most remain onsite, others don't; however, they seem to be around all day into the evening.

I guess I'm a little astounded that here in the Portland-metro region they are so plentiful while obviously in short supply where the OP mentioned (that should have them).

When I was a kid my brothers would take me to this taco stand in the corner of a car wash parking lot in Silverlake. Dang, those were good.

There were a few attempts at bringing back a "roach coach" business around here during the past three years I've lived here. But it lasted less than a year and went bust for whatever reason.

As far as fast-food, taco joints go, I'm a Del Taco guy. Taco Bell, Taco Box, and that other place that got out here don't do justice in that regard.
Again, I'm usually heading out to Albuquerque and getting whatever I can when I'm out there before getting back home. Nothing like a Macho Combo Chicken burrito, or fish, or shrimp soft tacos year round with some crinkle cut fries.

And yes, I was in Portland about five years ago and do remember seeing quite a few taco trucks and stands as I rode my bike from the Jubitz truck-stop and into downtown.
You'd think they would be more numerous out this way with a good number of Hispanic residents around and even the air force base nearby. But, the "Tex" overrules the "Mex" in this little region. Hence my little rant about the Texan BBQ stereotype being run into the ground out here.

Guess it's time to go grocery shopping for all the proper ingredients and get back to my own gourmet cooking. My only bad habit when it comes to "brown bagging" it is the fact that I'm too ----ing stubborn to keep it simple.
Others simply throw a two-breaded sandwich together, I'm busting out the frying pans and cutting boards thinking I'm some sort of chef. And BAMMM!!! I'm late for work!!

Living in SoCal and frequenting Vegas, Phoenix and ABQ over the past, ten years, I got used to all-night taco stands. The type where you could get more traditional tasting tacos and rather large burritos for quite cheap and rather quickly. Not to mention you could get the burritos either wet, or dry for when you had to eat and go.

Having lived out in this part of the country for about four years now, the lack of these mobile facilities has finally dawned on me. The only places I could get anything remotely close to taco truck quality seem to all be semi-formal, sit-down places. And even those seem to be grossly outmatched by the preference for horrendous BBQ out this way(yeah, I'm near TX and go through it quite frequently, so it kind of perpetuates the food stereotype effectively).

Call this a fact of myself never adapting to the way of life out here, but I really miss having a small stand or even a truck around. Currently, a 220 mile trip to Albuquerque is the only way to satisfy that need. Or stay home and attempt a poor imitation of the street goods I grew accustomed to.
There is an awesome taco shack in Spearman, TX. It's near the water tower. Their food is of the same quality and satisfaction you'd find at a taco truck in central California.

You mean "Portland, OR" aka one of the most foodie centric parts of the country? If so, that doesn't surprise me

On my nightly trip up to the dairy I load in Perryton, that isn't too far away from me.
And the 759/760 goes right past the water tower whenever I have to bone out to Hartley to play backup.

Now if only I could find a spot to park the truck there if I'm lucky to catch it while it's open!!

You can park along the curb as long as it's not marked.

Well, I've got a daycab and a 45' tanker any way, so that shouldn't be too much of a problem.
I also checked out this one along the 60 in Hereford on Saturday night(was bobtailing so I managed to sneak behind it).
It was alright, but the one thing I'm trying to find are those monster, carne-asada burritos.

So far, everything has been rather small, maybe that one in Spearman will be the ticket!!

In the meantime, I've also been buying cabbage, cilantro, and onions to throw onto random tacos.
Pulled chicken off of the bone on top of the veggies with some Tapatio on one of those small, corn tortillas.
