I've been eating Onion Rings for over 50 years and they seem to have gotten worse over the years. I've found Red Robin Gourmet Burgers and Brews always seem to make good onion rings.

Jalapeno Poppers have become my favorite since the 80's, if properly made... I encountered Jalapeno Poppers which were made by a family in Nogales (Arizona and Mexico).

I usually make small batches baked. Here are the top four recipes I have tried over the past 10 years or so:

It would be inedible for the vast majority of Americans.

I've used poblanos, Hatch nd Anaheim chile's (roasted or raw) to make similar things - though, due to their size, they are more of a stuffed pepper than a popper. The poblano is milder than the jalapeños, the Anaheim is usually milder, and the Hatch's are very variable in their spiciness.

I've also layed roasted peppers flat and put the 'filling'' mixture on top, layering it - a la casserole style. Cut into bite-sized squares, these work well for parties, especially with mild italian sausage, onion, cream cheese and poblanos. Bacon is the top layer. Cheddar cheese in the filling optional.

The enjoyable aspect of the popper is the heat of the jalapeno vs the soothing creaminess of the cream cheese. Using a habanero would result in having too much heat.

I have tasted nearly every pepper in the market. I am past the stage where I really enjoy eating something that disables my taste buds for hours on end. Heat is supposed to bring a slight contrast to a dish, NOT overwhelm it.
