We just smoked one Friday night and I did the following with it: Sliced it for dinner portions, sliced it thin for lunches, cubed it for salads, sliced it in strips for tacos/fajitas.
For lunch yesterday I used the thin slices for sandwiches. I toasted only the outside of the bread. Sliced red onions, piled romaine lettuce high, spread bbq sauce on the sandwich and had a yummy lunch.
Anytime pork tenderloin is on sale, I'll buy one or two for the express purpose of cooking it up to then chopping/slicing it up and sticking it in the freezer to be used in future recipes. I use that pork for all sorts of things ... fried rice, stir fry, pot pie, casseroles, rice & beans, soup ... pretty much anything.

So even after it is cooked, it freezes well? That would be the BEST solution for my delicious dilemma.

How do you freeze it? In baggies?
I put ours in freezer bags or food seal it. Freezes and re-heats well. As with any food, make sure it is completely cooled before placing in the freezer.
