I bought four large mangoes for desert for a thai themed dinner group (I was making sticky rice with mangoes). That dinner jas been cancelled. Four large mangoes set to ripen at the same time is too much for us to eat.

I have bunco right around the time these things will be ripe, and bringing a dip, desert or appitizer type dish is expected. So I'm looking fir ideas to use those mangoes BUT I DO NOT BAKE. I cook, and do it fairly well, but I dislike the measuring and exactness required to bake.

Any ideas? Frankly, I'm thinking of just cutting up the mangoes, adding some watermelon and calling it a day. (Unispired, I know.)

Then I take the mango chutney and whip in some cream cheese and it makes a lovely spread with gingersnaps.

That sounds lovely to me. Maybe throw in some red onion and feta and mix up a balsamic vinaigrette. Add fresh mint if you like.

In clear plastic cups layer Angel Food Cake (store bought), cut up mangos macerated in a little sugar, and homemade whipped cream (holds up better than redi-whip), 2 layers, add a pretty slice of mango to the top.

We eat a lot of mangoes in my family either fresh,mango salads,mango chutneys,mango sherbet,mango ice cream,cold mango soup with cream of wheat dumplings,mango lassi or mango smoothie.

mango salsa is good to get rid of a couple. You can also make a mango sauce to use for desert topping on cheesecake etc. It freezes well.


for the sauce, puree in a blender with sugar (1/2 tsp sugar to every cup of mango) and add a bit of water as needed to get a good consistency


Lot's of salsa recipes out there. I usually substitute Serrano peppers for Jalapeño

Pueree mangoes and mix with plain yogurt (add vanilla extract and sugar to taste to yogurt before mixing in mango). No measurements, just adjust according to what tastes best to you. Chill until ready to eat. You can also top with whipped cream or fold in some whipped cream.

We buy lots and lots of mangoes when they are in season and if we can't eat them before they get over-ripe, I peel, seed and dice them and freeze. They are great in smoothies or you can make home-made mango ice cream.

I am currently in possession of a mango. Using for smoothies. There isn't really all that much fruit when you consider they have a big seed. Make fruit salad, or even preserves.

I used to go somewhere that served mango chutney with grilled salmon sandwiches, it was great.
