I would have unbalanced meals...sshhhh.
I like some of the frozen entrees, so I would have things like a Marie Callender pot pie, Amy's Organic enchiladas, and maybe even a frozen pizza. I would not normally serve these things for dinner, but my focus would be more about not dirtying any pans, than it would be about the food.
Hamburgers or brats on the grill are always an option.

Truly? How can a group of strangers who don't know your tastes/likes/dislikes possibly tell you what to eat?

As for me, I'm home alone all the time. Some days I'll throw a few chicken thighs in the oven and have the beginning of several meals. Some days I'll heat a frozen meal (M Callendar, Healthy Choice, etc) Occasionally, cheese and crackers will do it. I happen to like liver and onions, a lot, so that's a good one when you're alone, 1., if you like it, and 2., if nobody else can stand it. I could never make it when the kids were home so took to ordering it when we went out. They threatened to make me sit in my own booth! lol

Soup and grilled cheese sandwich(es). Baked potato with chili topping. Slice of ham and a sweet potato. Pizza and wings. A big ol' salad. A quart of ice cream. No rules when you're alone.

Or you could go stay in a hotel and order all your meals from Room Service.

My husband travels from time to time for his job, so when he's gone, I take advantage of the time to make all the things I really like that he really doesn't.

Easy eats for one:

- Pasta
- Frozen chicken baked for ~40 min
- PB&J
- Frozen pizza baked for ~20 min
- Steamed rice/veggies (a few min in the microwave)
- Salad
- Cold cut sandwiches

You can find excellent cured meats in just about any part of Europe. Go and buy some meats, cheeses, and some local bread.
