I found Indian food to be local - so wherever I was had good, in fact excellent food, but of a limited variety.
It changed to a different type wherever s I travelled, but still was mostly small in selection.
This is true in some places. However, in the megacities like New Delhi, Kolkata and Mumbai, there is a lot of variety and interesting fusion cuisine that you won't find anywhere else.
In UK, it is local British population who is seen eating in Indian Restaurants and they have developed their own British Indian Cuisine like Chicken Tikka Masala, Bhuna and many more. On the other hand, Indian Restaurants in USA are patronised by Indian immirants more. The variety of food is less here because unless the local population start patronising these places, it is going to be difficult to survive only on immigrants. Indian Restaurants in USA are overpriced in my opinion, variety also leaves lot to be desired. Food variety reflects the background of dominant immigrant communities - Gujarati, South Indian and Punjabi only plus usual Mughlai Food.
One of the most accomplished Indian restaurants in Raleigh is called Royal India. My absolute favorites are the tandoori chicken, chicken curry, panner saag, samosas, goat curry, and allo matar.
My favorite Indian food dishes are aalu gobi, butter chicken, chaat papri, chicken biriyani and you can try these.
