If I freeze an unopened carton of half & half, how will it be when it's thawed? I was going to use it for cooking only, not in coffee or other uncooked stuff like ice cream. I figure it may look weird (separated), but should be okay if I shake it up and use in cooked stuff like mashed potatoes, sauces, casseroles, etc.

Is this assumption correct?

You can freeze it. It simply reverses homogenization. Defrost it in the fridge, then just shake it at room temperature.

We freeze mils all the time without any issue. I have had problems with freezing half and hald and cream and just don't do it. We buy it by the pint and always go through it in 10-14 days.

No worries...milk products can be frozen with no issues! As stated...when thawed...shake well!

good to know. We get ours from Aldi's and the quart is too much for us. It goes bad before I can use it. I will have to remember to freeze 1/2 of it. Of course I should have known this: we freeze milk all the time.

Well, a whole pint is sitting in the deep freeze right now. Will be like a science experiment to thaw it and see what I find! Worst case scenario - give it the ole tossola.

So, I put the container in the fridge to thaw. When it thawed completely, I shook it a bit then opened. It looked and tasted just the same as if it had never been frozen.

I conclude that freezing half and half has no affect on it's consistency, look, or taste after thawing. Good to know!
