I once used baking soda in pancakes instead of baking powder...it was a mess. I never knew I could substitute one for the other in the right proportions. I just make sure I always have both on hand.

Baking sofa and baking powder are inexpensive and easy to obtain. I never thought about not keeping both on hand.

Baking soda is soda. Baking powder is soda, monocalcium phosphate and sodium aluminum sulfate. (dry acids) getting it wet activates it. Some recipes call for both. It causes the "double action".

If you shake "wings" in baking POWDER, then bake at a high temp, the skin will be VERY crispy and the meat, tender! Dry well before shaking in the baking powder!
