Tonight we're having crunchy lemon chicken over creamy garlic pasta, roasted zucchini and carrots, Italian bread sticks and coconut cake for dessert.

I have some scallops and some shrimp, so I'm thinking of seafood pasta, or maybe just ham with Mac n cheese.

Home made beet and and black bean burgers on a sesame roll Baked sweet potatoes with sour cream. Butter lettuce, radish salad and crunchy Asian noodle salad with a citrus dressing.

Red globe grapes and Gouda cheese. A glass of wine.

We are seriously dieting, bathing suit season is approaching. Tonight I made spaghetti squash and topped it off with shrimp in tomato basil sauce with parmesan. We had salad on the side. It may be diet food, but it was delicious! I am totally in love with the website Skinnytaste.com

Dieting does NOT have to mean punishment!
