Me - chicken salad with shredded cheddar cheese in it on a croissant that will be wrapped in foil then baked until the cheese is melted. One of my favorites!!!
Happy Sunday everyone! Got back from Peru on Friday (business not pleasure) and spent yesterday zonked out. Today, I made a crown roast of pork filled with shrimp and grits, apple relish, garlic mashed potatoes, rolls, spicy cabbage and biscuits. My husband is grinning from ear-to-ear. (Hopefully not just for the food!) I am still fairly exhausted but I have missed being on here.
It's gorgeous weather here...doors and windows open, fresh cool air coming in...so I am making chicken breasts on a bed of rice. Baked with sliced carrots and onions thrown in and some chicken broth to cook it in. Some frozen peas were added at the end, all covered with foil. Haven't eaten it yet--got the recipe off the internet.
I think we are going to a BBQ, host is south american, so there will be definitely some good grilled beef...
we are bringing double choc chip hazelnut cookies, and fresh mint from the garden- for cocktails... (there will be beer/ IPAs of course, but some of us want fun drinks)....
