Chicken ramen soup & a few shots of hot sauce, followed by a ristretto. If the hot pepper doesn't kick out my 6-wk, won't-leave-me-alone cold, maybe the thick-as-pudding ristretto will scare the bugger away.
We are having chicken breast with breaded mushrooms using the air fryer: the novelty of the air fryer hasnt worn off yet and I am addicted to it. I guess there are worse addictions. We will have cous cous with fresh spinach and onions as well as green salad with pomagranites, beets and blue cheese.
Tonight potato salad,roasted chicken drumsticks with parsley and garlic,green beans and corn. To drink beer. For dessert vanilla ice cream with melted dark chocolate.

I am again on an upside-down schedule, so I had dinner a little while ago (even though it's only about 10 a.m. my time). I had defrosted some boneless, skinless chicken thighs but wasn't sure what to do with them, so I tried a new recipe: honey garlic chicken. Talk about easy!! Three ingredients to make the sauce (honey, garlic, and soy sauce), then pour said sauce over the thighs and stick them in the oven.

And mixed with rice (I meant to add some broccoli to the dish but forgot -- I will definitely remember next time as this needed a veggie!):
YUM! The sauce was delicious -- really glad I made extra. I may try it over rice noodles instead of rice tomorrow (lots of leftovers, but I think they'll freeze well in little Ziploc containers so I can take them to work).
