We decided to have a combination late lunch/early dinner today.

We had grilled pork chops which were very nice. DH got them done perfectly! I prepared garlic fingerling potatoes. We also had two thick slices of a lovely yellow tomato that we bought at the farmers' market today, served over luscious lettuce bought at the same place, topoped a small pour of EVOO and a sprinkle of parm cheese. For dessert we each had a lovely OR peach.

I took a couple of really nice pork steaks out of the freezer yesterday and put them in the fridge. We will have grilled pork steak, smothered in onions and mushrooms, roasted veggies and maybe ramen noodles. I don't know about a salad, but if we have one, it will be sliced tomatoes and avocado.

Last night's cod with EVOO, s & p, minced garlic and fresh basil with a greenless salad. My husband made a honey Dijon maple vinaigrette to go with it. I made mac and cheese too but I didn't eat it.


Busy day today so I am doing a easy meal tonight. I am just cooking turkey and zucchini in a premade mango curry. I will serve over rice.

last night was cabbage marinara. Tonight will be sockeye salmon with pesto-yogurt sauce, Caprese salad and corn on the cob.
