turkey meatloaf, mashed sweet potatoes, broccoli and blood oranges for dessert. Tried blood oranges for the first time last week. They are fantastic, my new favorite thing!

Had kinda hoped for leftovers, but there were none!

Then I kinda was thinking maybe I'll just run over to McDonald's. Well, the ice covered roads, constant rain, and upcoming thunderstorms put the kibosh on that.

Then I thought we could order a pizza, but I feel terrible asking a pizza guy to drive in the ice covered roads, constant rain, and upcoming thunderstorms, so I put the kibosh on that.

Then I was thinking that we'll have breakfast for dinner - maybe French Toast and sausages. But I am feeling very lazy and headachey due to the weather, so that's probably not going to happen.

I'll probably just have the pineapple I have in the fridge - husband has enough stuff of his in the fridge that he can graze. I can't really EAT eat when I have a headache - I get sicker.

Many say that Karma is a *****. I have been sick for the past couple of days thanks to a "friend" who NEVER stays home when he is sick.

Last night, my wife was supposed to cook dinner for me. However, at 8:00 pm, I found out that well, she forgot. I had to drag myself out of bed and warm up some leftovers.

Today, I knew that I had to cook. See above. I got up this morning and cleaned the tomatillos, the hatch peppers, the poblano peppers, and added in some cumin and Cheyenne pepper. I added some broth and blended it into a nice puree for the stew. I was tired so I llaid down for a while.

About an hour later, I hear a bloody loud scream. Why wife had a glass of the green sauce. I GUESS she thought it was a smoothie!

Oops, wrong. (g)

Haha! I just saw this! Did your wife kill you yet?

Nope. I do the cooking, the laundry, the grocery shopping, among other things.

I am useful to have around.😂

You know that big batch of three bean chili I made yesterday? It's even better today.

So tonight I am serving it over baked potatoes, with sharp jack cheese and sour cream and a green salad with lime cilantro dressing.

(mental note to self - I need to stop cooking as though I have hungry teens and their visiting friends to feed. I no longer do, except in the Summer)

Tonight's menu is Low-Carb Lemon Chicken (based on a Dana Carpender recipe, but modified by me), made in the crockpot.
I will serve it over a mound of fauxtatoes (mashed/pureed cauliflower).

Yum!
