Did not take anything out of the freezer for dinner but DH wants chicken, So take out chicken it is. I have been eating out too much this week, gotta cut back.
This is actually last night's dinner ... chicken, broccoli, onions, and Thai sweet chili sauce with noodles, plus a serving of Lean Cuisine spring rolls ...
I am finally just about out of the Simply Asia boxed meals I have been hoarding (I used to buy a case at a time from amazon or Wal-Mart online, but they stopped making them) ... love their noodles. I saw that the noodles were simply made of wheat (no odd combos), so I ordered some wide lo mein noodles from amazon when I couldn't find anything comparable at my local grocery store. These noodles come VERY close to tasting like the Simply Asia ones (the shape is like fettucini, but the taste is basically the same), so hopefully my search has ended.
surprised you skipped the cheese. We have always eaten cheese when on a low carb diet. The rest I can understand.
Why surprise? I'm allergic to all dairy. I also don't like cheese... or any dairy, really. I did find some bland, non-dairy, organic, yougurt-ish glop that I can use, should I ever desire... that doesn't happen often. The texture is nice & creamy & the price tag was a bit high... but, overall, it's pretty blase.
Tonight's dinner was homemade chicken broth I'd frozen weeks ago & some organic powerbar I'd bought to keep in the car for emergencies. Just got running water again tonight after the hurricane, so I've been unable to cook. For desert... late night espresso is in order.
We really like those Lean Cuisine spring rolls (with a sweet chili sauce dip).
Me too! Sometimes I have a serving (3 little spring rolls, half a package) for lunch. I DO wish they came with sauce (who eats spring rolls "dry"?), but I always have plenty of Thai sweet chili sauce in the pantry so it's not a big deal.

Back in the '90s I lost a lot of weight and I swear it was due to (a) exercise (I became a running fanatic) and (b) Lean Cuisine entres (OK, other brands too, like Smart Ones). I wasn't much into cooking back then but I could sure stock my freezer. These days I don't eat them very often since I now love to cook, but I usually have a few in the basement freezer just in case I have nothing else ready for dinner!
