Great article! I knew delicious boudin from my many road trips through Mississippi down to Louisiana. It's with great pleasure I learned (after moving here from Far West Texas), that Cajun delicacies like boudin are readily available throughout the Houston area.

You will be able to find any Cajun product in the Houston area and further east. As you get to Beaumont, you will find that the food approximates Louisiana cuisine. In fact, I would encourage that you expect Eastern Texas and the western parishes of Louisiana. The festivals have some of the best food I have ever had.
Hot Italian is my favorite. I'd remove the casing. Brown them in a cast iron pan. Add fresh garlic, onions, bell pepper, dashes of fish sauce, a bit of brown sugar, some fresh sweet basil leaves. I sometimes add some blanded veggies like green beans or carrot to make a complete meals. Serve it warm over steamed rice.

We did a gumbo crawl from the Beaumont/Port Arthur area eastward to Alabama. We noticed the gumbo was very thin and soupy in Texas and thickened as you got closer to New Orleans. However, the boudin was pretty much the same the whole way (aside from the spelling changing between boudin and boudain for no particular reason).
