You talking about Cajun 'trinity' or something along the lines of a mirepoix?

Bell peppers can be used as means to add color to a dish.

guess I should have specified Bell peppers. I used to love them, would slice for a snack while I cooked with them but after the surgery even if they are tiny and cooked down to nothing my stomach notices them. I read ingredients like a Celiac does for any type of bell pepper. If they're cooked in something they still affect me. Chilies don't seem to bother me. And what prompted this rant was my CEO eats them daily and yesterday whatever he re-heated had to be 90% peppers... I could still smell them late in the afternoon. thank goodness smell doesn't affect my tummy!


And the lack of variety of food at the wedding I attended was noticed by more people than just me. I heard comments throughout the buffet line and dinner... roasted red peppers in every side dish, in the salad (how long would it have taken me to remove all the peppers from the lettuce?!?!?) and as "garnishes' on the side. But then it was their wedding - their choice....

That's a sign of a lazy/cheap caterer. Minimize the number of ingredients used by integrating them into multiple dishes.

Hmmm thinking back to my meals out this week (have a guest in town)-

veggie entree tray- mashed sweet potato, stuffed avocado, riced cauliflower, Kale salad...
Sushi dinner, fried chicken meal, BBQ lunch (I cheated and had a chili dog, friend had the BBQ pulled pork sandwich ), the fried fish platter, and this fried calzone thing (a skinny version with mozzarella and ground beef and onions from the Sicilian food cart--

none of these meals had any peppers in them whatsoever...

so yea I think it depends on the cuisine...

Actually the mother of the groom said the bride and groom REQUESTED the roasted red peppers! They LOOOOOOVVVVE them.

I made sauteed red bell peppers last night.

It seems odd that they would bother your stomach. I had my gallbladder out decades ago and nothing bothers me. Bell peppers are so mild.

You may want to check with your doctor.

I cannot tolerate peppers cooked in anything, so I don't order any food that has them. I don't dislike them, but my body doesn't like them. I can eat them raw, and I can tolerate pimento in food, but green, red or yellow peppers cooked in something...no.
