Ive made pancakes the past 2 days and both times have been horrible. Yesterday more than today. Followed the recipe but it still turned out wrong! what am I doing? Todays pancake recipe called for baking soda which I didn't have but the flavor was very bland kind of sour. I was making whole wheat pancakes for a leaner breakfast to start the day. Please help! I need my pancakes to be more fluffy and full of flavor!!
I don't have my recipe in front of me but I use a mixture of whole wheat flour and white flour, salt, sugar, baking powder, a beaten egg, bit of oil, and as much milk as needed. Stir it up and make one pancake as a tester. It's ok if the batter has lumps in it.
That first pancake will tell you if you have to add more milk or more flour to the batter. If it spreads way out, you need to add flour. If it glops there in a semi solid heap, add milk.
Then you make the rest of the pancakes, turning them when bubbles appear on the tops.
What I do is make up a jar of the mix and when I'm ready to make pancakes all I have to do is add egg, oil, milk. You can even use dry milk in your mix so all you have to add is egg, and water.

There is a general perception among those who are new at cooking that you can omit ingredients and the recipe will come out fine. Unfortunately, nothing could be further from the truth.
Baking is largely a chemistry experiment. If you don't put in certain ingredients at the right proportion, the product will be a complete flop.
If you have a very limited pantry, it is often better to purchase mixes which include all of the ingredients
Club soda instead of water. Quality flour. Most likely the flour sucks..
Mix dry stuff first, then STIR wet stuff into it, adding carbonated water at last. Do not overmix.
I make mine without milk. To me milk makes them too hard.
If you want supper fluffy - separate eggwhite. Mix egg yolk with the wet stuff, beat whites untill stiff, fold into the mix carefully, add carbonated water, fold again. Fry immediately.
Blend 2 ounces of cream cheese with 2 eggs in a nutribullet or blender. Heat a skillet with a bit of butter while the mixture rests for 2 minutes. Pour 1/4 of mixture into pan. Cook for 2 minutes, flip, and cook for 1 more minute. Repeat with rest of batter. Easy and delicious! Gluten-free and low carb as well. No flour nor baking soda required.
Add a couple drops of vanilla to the pancake batter (the real stuff not the imitation crap).
Also butter (from grass-fed cows not the mainstream stuff) and REAL maple syrup (preferably light or medium amber, not the dark stuff).
