I have been making a kale salad - it doesn't wilt!

Kale (Dino kale is my fave for salad)
Fruit
Salty cheese
Optional: nuts
Dressing: your favorite acid and oil
Salt and pepper to taste


Sample:
Massage kale with lemon juice, salt, olive oil
Chop up some pink lady apples
Cube sharp cheddar cheese
Add walnuts
Salt and pepper to taste
Mix it all together

#2:
Sub white balsamic for lemon
Sub apricots for apples
Sub almonds for walnuts
Sub ricotta salata for cheddar

#3
Figs
Balsamic vinegar
Feta
Walnuts
