I've had them at Deluxe Diner in Watertown, MA. I like them better than the standard ones. The natural sweetness makes them good enough to eat with hardly any syrups.
Haven't had sweet potato pancakes but I've had pumpkin pancakes many times. Imagine they're similar. The pumpkin pancakes are good. My friend keeps portions of cooked pumpkin in the freezer to add to her pancake batter. Guess you could do the same with cooked sweet potato.
Yes , I love them, but the ones I've had are not like conventional oancajes, but more like latkes. I've had with grated raw sweet potatoes and also with mashed baked sweet potatoes and scallion. Plus eggs, some kind of binder, salt and pepper etc. Then either fried or baked.
I love sweet potato, I'm going to try a recipe I found online.
