I'm thinking of something relatively quick and not too expensive (ingredients wise; ,<$20) to bake everyday. I've thought of chocolate brownies but I find anything loaded with chocolate too overpowering and have never enjoyed it. Similarly with vanilla cakes.

I'd prefer something like creme brûlée , tiramisu, cornbread, etc.. I like toffee/vanilla flavour.

What do you recommend?

Are you serving this to others? One of my favorite desserts is raspberries and heavy cream. It's not terribly pretty, but it tastes good.

I was going to suggest flan, crème brûlée, and tiramisu. My go-to desserts. Quick and delicious!

This is an amazingly easy and tasty pie:

Bisquick and Coconut pie

1/2 cup Bisquick
3/4 cup sugar
4 eggs...
2 cup milk
1 cup flaked coconut
1 tsp. vanilla
1 TBS. butter, softened

Combine all ingredients and pour into 9 inch buttered pie pan. Bake at 400 degrees for 25-30 minutes until custard sets. Like magic it layers into crust, custard, coconut topping. Cool.

Tip: One cup of Bisquick can be substituted by a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 tablespoon of oil or melted butter.

Well you lost me with the brownies remark ;-) but what about blondies? I like these from the brown eyed Baker https://www.browneyedbaker.com/cocon...hunk-blondies/

Or how about cheesecake?

I second the recommendation for Blondies. They are quick and easy, you can adjust the sweetness, you can use nuts or leave them out, and you can put wonderful things like Heath Chips, Butterfinger Chips, M&Ms, on top.

Ditto on "lost me on the brownie" remark. You balance it with vanilla ice cream.

I always make the legacy Baker's Chocolate brownie recipe and have an old box saved since it's not always printed on the box these days.

Nuke butter and 4 oz of chocolate until the butter is melted. Stir. Add sugar. Stir. Add vanilla and eggs. Stir. Add flour. Stir. Dump into a large foil covered/greased pyrex baking dish. That's about 3 minutes of prep. If you line the pyrex dish with foil, cleanup is pretty trivial.

It's kind of annoying that Baker's Chocolate now comes in a 4 oz box instead of an 8 oz box but didn't lower the price. I use Penzey's double-strength vanilla. With the cyclone in Madagascar, that's now $92 per pint. Yikes! Ben & Jerry's vanilla ice cream.

Ben & Jerry's is on sale for 3 for $10 at my local grocery store. Dessert for 8 comes in at well below $20.00 even paying full price for the ice cream.

It's strawberry season here. If I'm doing dessert, I'm featuring that. Maybe add sugar and some chopped strawberries to my standard buttermilk biscuit recipe. A splash of Grand Marnier and a squeeze of lemon on a bowl of sliced strawberries to dump on top. I gave up making my own whipped cream and use Cabot cans since it's just as good as mine. Served with a scoop of Ben & Jerry's vanilla.
