I'm not really a salmon expert and couldnt tell the difference between a trout and a salmon, however there are many fish markets in Montreal including the one at Atwater market, im sure you can get anything you want and if they dont have it they will order it for you.
Or as you are in Fla you can have fresh salmon delivered to your door =

Maybe there will be a time when I'll like cooked salmon again. Currently, I only like it raw or cold-smoked.

Funny that you should say that -- I've only eaten raw or smoked in recent years. I can't remember the last time I've had cooked salmon; it's been many years.

Except for King, all Pacific salmon tastes like firm, dry dogfood to me. It just is not fatty and tender enough.

That is my opinion only. No offense to those who like Pacific salmon.

My local market offers Coho for $9.99 lb reg price they say $22/lb, and I had 8 oz last week and it was so tender and juicy. Some salmon can be dry. Not this one.

Salmon is only dry when overcooked. Far too many people do not cook salmon, or fish in general, properly.
