OK. Maybe it is just a local thing then.
Personally I do not eat Americanized Chinese food because I do not like the taste, but when I travel I still buy it occasionally.
Additionally, many (but not all) small Chinese restaurants are run by early (illegal) immigrants from certain rural areas of southeast China. I have to wonder what kind of oil and ingredients they use. On the other hand, the new authentic Chinese restaurants tend to be run by relatively new immigrants who are wealthier and from major Chinese cities, and their quality is more trustworthy.

I don't think legality or wealth has anything to do with the quality of oil and ingredients.
"Wealthy" people could be using cheap stuff as well. Greedy people do it all the time

Of course it is not a rule but a probabilistic distribution.
They are Americanized for a reason - to please American palates and cook food that sells well.
Generally people here like sweet, salty and fat....
Americanized ethnic food is sort of fusion cuisine.
