I am going to add a few other ingredients to my salmon cakes I am taking to a friends house as part of my pot luck contribution.

I have made the salmon cakes many many times and everyone loves them.

I am trying to dip my toes into the deep end of the pool and spice them up a tad by adding the following ingredients to the premade salmon cake mix: roasted garlic and finely chopped parsley and finely chopped green onion shoots ( the kind that look like bottle rockets ) and maybe a small handful of shredded parmesan cheese.

Parsely is the 1 wild card ... I am not certain how much is good as I am assuming its kinda a potent herb or spice or whatever its called.

total salmon cakes maybe around 16. Will be using double the amount of salmon as I have plenty and they taste much better with a bunch of salmon vs skimpy

My guess is about a shot glass full of diced up chopped up parsley for the batch ? is that about right or do I need more ?

Parsley is an herb and the flat-leaf Italian kind is stronger in flavor than the curly kind. Whichever you get, taste it. A shot glass might be about 2 tablespoons and it sounds OK. Fry a pinch of the mix and taste it cooked, then you can decide about everything. It's a good idea if you're changing up the recipe. I'd nix the cheese since it can be an odd mix with fish, but the roasted garlic should be mild enough and the green onions should give a fresh flavor with the parsley.

I think a shot glass worth of parsley is a good idea. Possibly serve some lemon slices on the side merely because a little lemon is always good with salmon.

I like to serve them with a sauce made with mayo, lemon juice, and honey. Then I garnish with finely chopped parsley.

I would choose one to add and see how you like it instead of trying all three at once. Fresh dill might also be one to try. The cheese may not work, as previously noted.

Personally I would skip the cheese. Less is better. Let the fish be be focus. Parsley finely chopped, a dash of cayenne. Parsley and lemon wedges for serving.

I consider parsley to be very mild in flavor compared to most fresh herbs.
