They call for frying 20 minutes in a frying pan with 2 flips on medium heat. I turned the outsides to charcoal. It’s a gas range that runs kind of hot, did too much heat probably do that?
20 minutes sounds way too long. I usually cook frozen turkey burger patties for maybe 10 minutes? I put them on more of medium high heat and flip frequently.
It says:
TO FRY: Preheat skillet on medium heat. Cook frozen burgers in a small amount of vegetable oil 7-9 minutes per side (turning twice) and until fully cooked to 165°F.
I don't like to fry frozen meat. Perhaps you should thaw the meat before frying, and then just fry 3-4 min each side?
Also... why did you continued frying when you saw that the meat started to turn to charcoal? It was obvious that you were burning it...
I have never tried to cook a ground meat pattie, either beef or turkey, from its frozen state, because of what happened to you...the outside burned before the inside cooked...I always thaw them first. (Actually, I most often buy the ground meat & make my own patties...usually it’s cheaper.) Plus, sometimes the cooking directions on things are just plain wrong.
BTW, have you ever made them on a Foreman grill? I think that you get a better end result. I don’t like to fry meat, unless it’s fried chicken or bacon.
Medium heat might be too high for poultry as it needs to cook to 165. Try medium low. With beef you can get away with 3 or 4 minutes at medium per side but poultry has to be fully cooked.
I never cook burgers that are frozen. I thaw them first. It doesn't take long. How can anyone control the temperature -- cooking the outside while the inside is still frozen?
20 minutes seems too long. Medium-high on a frozen burger seems to high.
Thaw the patties first, apply oil directly to the meat for better results vs. putting oil in the pan, be sure the pan is heated (medium to med-low)before putting meat in it. After putting meat in heated pan cover with lid for 1-2 min., then add approx. 1-2Tbls water to steam - this will keep meat moist and ensure a more thorough cook more quickly, flip every two minutes. Total cook time should be about 10 minutes.
