Keep rotisseried chicken in mind all year A hot supermarket chicken is usually less than half the price of a KFC bucket of the same amount of chicken. On road trips, we eat them a lot. Grab some really good potato salad while you're there, and a nice warm baguette.

That sounds like a fun meal.
If you live near one, Costco sells bags of rotisserie chicken meat--that would save you stripping them down.
I do have to have coleslaw with pork sliders though. Enjoy the day.

Sounds delish. I would just suggest adding a tub of vanilla ice cream to put on the cobbler at dessert. The vanilla premium ice cream they sell at Costco is amazing.

I am a big fan of using catered (heat & serve) holiday meals and just adding a few extra touches, like an extra dessert that I made or ordered somewhere else, a simple appetizer, etc.

Sounds like you'll have a great dinner, and can spend the time to enjoy eating with your guests. Happy holidays!

after reading this thread, I really wish there were a costco nearby. Safeway has our favorite "huli-huli" (rotisserie) chicken here.

Sounds like you are cooking plenty with all the dishes you named. Buying some ready cooked chicken sounds fine to me....don't feel guilty that you'll have some energy left to enjoy your day!

It's a great idea. The only challenge might be timing since you won't know how popular they may be and have to wait awhile for fresh ones to come out. Or the reverse - you don't want to pick up chickens that have been sitting there for hours, which is probably unlikely.

I am headed to Costco to get the Christmas rotisserie chicken in an hour or two. It was enthusiastically requested by all three of my guests.

Good choice, OP!

Edited to add:
I'm pairing mine with mashed potatoes, roasted asparagus, cranberry sauce (canned - don't judge!), two types of bread (boule, sourdough), corn pudding and stuffing from TJ's. Dessert is anything my guests bring plus individually prepared plates of baked goods from Whole Foods.
