I don't use any aluminum cookware. I see crockpots where the pan the food is place into is called "stoneware" but I don't know what that means. For a $20-30 crockpot, I can't imagine that it's stainless steel and figure its a fancy name for aluminum with some coating on it. I look on the box for a description that says the pan is stainless steel when poking around in the stores but haven't seen one yet. Anyone know of one?

Stainless is a poor conductor of heat. That is why slow cooker inserts are made of crockery.

Stoneware is made from clay, not aluminum.

Yes. My slow cooker has a clay (probably stoneware) pot. No aluminum. I think the stoneware would be better for slow cooking than would be stainless.

Stoneware is glazed ceramic. The insert is literally crockery. It's not in any regard stainless steel or aluminum.

The housing that holds the heating element is metal, but the cooking surface is just glazed pottery.

Yes, hence the name: crock pot - a pot made from crockery. The concept has been used for millennia - slow, moist cooking in an earthenware pot. With the advent of electricity, we can apply this cooking technique without setting a fire.

The instant pot can be used as a slow cooker and has a stainless pot. I've yet to try it as a slow cooker, but I'm very pleased with it for other things. Nevertheless, I don't imagine it's EVER going to replace my large sized crock pot.
