Most of the time, I don't have a real "lunch" any more, but will rather than a mid morning snack and then a mid afternoon snack. They're usually one or two of the following:

Crackers and some cheese
A piece of fruit
Flavored yogurt
Handful of nuts or trail mix
Handful of cornichons, olives, grape tomatoes
Leftovers like others have said

My usual quick lunch is a simple version of a Japanese pancake. I saute whatever veggies or leftovers are around, usually onions and bell peppers, top with a handful of shredded cabbage and a beaten egg or two, and steam. I eat mine with drizzles of Sriracha and Ken's Honey Mustard Dressing.

Cheese and assorted crackers to munch on, or a grill cheese with or without tomato soup. A clementine and carton of yogurt. Clementines are delicious this time of year.

Microwaving a medium sized potato takes less than 5 minutes and near zero attention.

Slam some butter S&P and cheese on it and you have a near zero effort quickie lunch snack.

I often eat some combination of fruit, nuts, and cheese. Yesterday, it was blueberries and walnuts. No cheese, and it's so cold out, I didn't feel like going to the store.

On the weekends i usually make some American Chop Suey, meatballs, meatloaf, chicken breasts or something, and package them individually in the freezer. That way I just have to throw int in the microwave but still have something decent. Personally I am more consistent with lunch than I am my dinners. Often that comes down to a boel of cereal or a baked egg.

I keep frozen flatbread around (I like Trader Joe's naan Indian bread). I put tomato sauce and cheese on one and heat it in the toaster oven for about ten minutes for a quick pizza.
