I am making chicken broth at the moment. I am using chicken wings, necks and backs and chicken feet (which I gave a pedicure! LOL) It will be turned into matzo ball soup for tomorrow night's supper. I'll serve it with grilled cheese sandwiches and a tomato and cucumber salad. Crazy combination, yes, but tasty. We are expecting 6" of snow tomorrow, I wanted some comfort food!
Tonight is asparagus and mushroom quiche.... and ham if I can find it in the freezer.

Tonight we are having Steak Diane with mushrooms and roasted potatoes; a garden salad with bacon and blue cheese; cups of cream of mushroom soup, and raspberry mousse for dessert. OMG! I can't tell you how much I miss my evening glass of wine! Easter can't get here fast enough for me. Skip that mimosa for Easter breakfast - I'll probably go straight for a tequila sunrise! That's close enough right?

AND I finally got my new phone set up & activated ... I am glad because my dinner posts seemed "naked" to me without photos!
For my (early) dinner, I had a leftover pork chop with garlic and thyme. It's a stovetop recipe that takes only about 15 minutes -- in fact, I usually have to start my veggies a lot sooner than the pork chop! Today, since the pork chop was a second one I made a couple of days ago, I knew it would only take a couple of minutes to heat up, so I went with fast-cooking veggies: onions, mushrooms, grape tomatoes, and snow peas ...
The pork chop was about 99% as good today as it was the first day. Maybe a tiny bit less juicy, but still really good. The veggies were terrific, as always!
