Chinese takeout. I got triple delight but without beef, so I guess it would be double delight.
Disappointed that I forgot to order the dinner combo that comes with the entrée plus egg drop or hot & sour soup, a spring roll, a crab Rangoon and a shrimp roll. I normally give the soup to DH and eat the spring roll, crab Rangoon and shrimp roll and then I'm too full to eat the entrée and save it for later. Today I had only the entrée.
Mexican takeout: A chicken burrito and two small soft carnitas tacos. The tacos were just $1 each at my nearest taqueria today (their Taco Tuesday special). Drank Modelo Negra beer.
Tonight chicken and red pepper curry served with basmati rice ( added to the rice cashew nuts,clove,green cardamon pods),cucumber and chili raita with roasted cumin seeds. For dessert mixed fruit salad served with grapefruit and orange zest shortbread cookies and a cup of chai.
For the red pepper paste I use
red Bell peppers
red onion
ginger and garlic
ground coriander
ground cumin
turmeric
almonds
cayenne
red chilies (or smoked paprika)
olive oil or sunflower oil
skinless and boneless chicken thighs
chicken broth
lemon juice
salt/black pepper to taste
fresh cilantro for garnish
I heat oil,fry paste stirring occasionally. Next I add chicken pieces,salt/black pepper,cook and turn them. I add next chicken broth to make a thick sauce and bring it to a boil and reduce the heat to low and let gently cook until done. Just before serving I taste test if it needs more salt/black pepper,adding fresh lemon juice and fresh cilantro.
