I tried making a chuck roast using the same method as brisket...no liquid, over a nest of onions in a cast iron covered pot. I have never made a pot roast without liquid before, but it turned out fine.
Mashed potatoes, gravy and carrots.
Last nights crepes didn't get made, so they are for another night.
Tonight I needed to use up tortillas.... I'm thinking layered tortillas (both kinds), with chicken, corn, refried beans and cheese. I am making a fresh green enchilada sauce, which is my first time with tomatillos.

I cooked a rump roast in the crockpot yesterday and shredded it. So tonight either open faced roast beef sandwiches with mashed potatoes/gravy and corn, or I am going to use basically the same ingredients and make shepherd's pie. I haven't decided which.
Temps in high 80's today. Opted for cold stuff - red skin potato salad, 1/2 of a turkey and tomato wrap and what was left of the bottle of pink lemonade.
Dessert: scoop of Turkey Hill All Natural mocha chip ice cream
I'm having the last of the Omaha steaks my sister sent me for Christmas, i.e., an oven-broiled five ounce filet mignon. I'm having that with kernel corn, mashed potatoes and a tall glass of iced tea.
Turkey burgers with lettuce instead of buns and sweet potato fries.
