I've got Jury Duty this week..sitting around twiddling my thumbs at the Courthouse now...
Wife is teaching Zumba class from 3 to 4 pm.

I think she is making a quick soup of cheese tortellini, chicken broth, fresh baby spinach, carrots, garlic, celery with lemon zest, and a few Squeezes of lemon juice.

I think it is a NY Times cookbook recipe.

We will be taking out frozen homemade lasagna to heat up. We will also add a salad and garlic bread.

I think I have developed a slight case of hypervitaminosis-A...........been eating quite a bit of liver for the last couple of years. So I have avoided eating liver for the last 2-weeks. I have been dreaming of eating liver again..........and tonight was the night, one pound of extra-yummmie beef-liver.

I made a freezer meal - we split a serving of lasagna, each had 6 Costco soup dumplings, and had fresh carrot sticks and cottage cheese for “dessert.”
