Was it the fresh or Smoked?

I'm i one of those too tired/to unmotivated to cook - I wish someone would bring me a meal but since that's not going to happen - I'm going to go w/soup (although that doesn't sound too appetizing either). I do actually cook when I am motivated and have some energy.... think of me all you folks that are having delicious meals, LOL.

I made my own version of jambalaya. Diced up the rest of our mini peppers (before it all goes bad), had a couple sausages left over (linguiça and ?), and chicken. Zatarain's Dirty rice. Mixed in. Few shakes of Emeril's Bayou Blast, Cumin/Turmeric, Dash's lime, and small cup of peach + pineapple. Whole grain roll. I had my Coke to finish up but got a few sips of Mr C's Zany mango beer from BJ's Brewhouse.

Dessert: Magnum cherry truffle ice cream bar

We are having a small Mid Summer (summer solstice) gathering in about a half hour. Setting out a smorgasbord of traditional summer solstice foods. I am done cooking and baking now - except for the grilling, which I won't be a part of, so this is the menu -

- Pickled smoked herring with sliced carrots and red onions
- cold poached salmon in white wine
- cheese platter
- carrot, celery and yellow and green beans with Green Garden Goddess dip
- caraway rye crackers
- summer light potatoes gratin with Havarti cheese
- Fresh fruit salad with fennel and honey Dijon mustard
- Buttermilk scones served with home made whipped honey butter
- char grilled summer vegetables - including red and yellow peppers, yellow squash, eggplant
heirloom tomatoes, and portabella mushrooms

desert - choice of strawberry filled cardamom cupcakes or bakery angel food cake, sliced thinly and filled with lemon curd and fresh berries -strawberries and raspberries. Or both, if you like.

To drink, honey iced sun tea, or Leinkugel's Summer Sandy

Guests are contributing green salad with multi colored grape tomatoes, rotisserie chicken, Limpa bread (Swedish rye) and Aquavit - a neutral sprit flavored with caraway, fennel and cardamom.

I attended a Solstice party several years ago and I thought I'd like to have one of my own.

Of course we will have the traditional bonfire, and s'mores, which are not traditional, but so good.

Salmon again! I swear I could eat it every other day (well, if it were as cheap as chicken!).

Very easy recipe: I just sprinkled Italian seasoning on the salmon pieces (I kept some for breakfast tomorrow), then cooked it on the stovetop for 8 minutes. Had to start the veggies MUCH earlier! I bought some fresh asparagus yesterday so of course had to add that and it turned out great. I love the veggies!!

Was about 15 minutes away from pulling something out of the fridge for dinner earlier tonight when my next door neighbor told me he is having a small backyard barbecue. Good timing!

He grilled chicken and carne asada. Had tortillas, salsa and other condiments so we could make our own tacos. Also enjoyed Peruano beans. I brought Modelo beer.

I have some short ribs, so I think I’ll braise them with some wine or Guinness, with onions, and carrots. Noodles or mashed spuds.
