A lamb stew-based shepherds pie. 4 pounds of trimmed boneless leg of lamb cut in cubes and browned, onion, carrot, lots of thyme, bay leaves, port, 1/2 bottle of red wine, More Than Gourmet Demi Glace extract, tomato paste, peas at the end. Lots of black pepper to give it a bit of heat. Red bliss potatoes mashed with butter and half & half. Bake at 350 to brown the potato.

I only simmered the stew for 2 hours. I was getting hungry. 3 hours the day before is better.

From the road yesterday, dinner was McDonald's b'kfast McFatty something or other... 2 of 'em & a bag of some horrendous "healthy" cheddar corn chips with a good dose of Starbucks coffee. I swear I gained 5-lbs on the spot.

Finally landed in Ft. Collins & at a nice hotel, so hopefully tonight's dinner will be something slightly better from a supermarket.
