While rummaging through freezer looking to make something for dinner, found a package of something starting to form crystals. Somehow it was wrapped up and missing a label. Turned out to bthe other half of spare ribs that we had maybe, last month. Hubby put it in the oven. Almost cooked, he added some more bbq sauce. We had that, mixed veggies, and a slice of pump/rye bread. I had a glass of Sangria and DH, his beer.
Mine is stuffed with a Stovetop stuffing Sage mix, more sage, meat from 2 Italian sausages, chopped onion, celery, and a jazz apple, 4 oz. chopped mozzarella, and 1/2 cup finely grated parmesan cheese. I used an egg and 1/2 cup of whole milk for binder. The sausage, onion, celery, and apple were sauteed together first.
I had enough stuffing leftover to make 6 stuffing muffins as well.
I'm having a carb craving which will become: protein pancakes with lots of butter and sugar free syrup
I'll probably do that before 3pm.

For me, 1/2 dozen Chinese chicken dumplings & 1/2 dozen shrimp. It was so good, I think I may have round 2... upcoming week is 70-hrs, so I won't be eating much. My body seems to shut down when tired & stressed... I forge ahead 'til I can quit, collapse & sleep. Sleep is chosen over air, food & water. So, it's nice to get in a few hearty weekend meals.
Please hold a good thought for me for a better job... sooner, rather than later. This one is horrendous in far too many ways.
My husband is making individual meatloaves. I am not sure what he will make to go with it, but it will be perfect. He is a great cook and is especially good at taking whatever we've got in the fridge at the end of the week and turning it into something delicious.
