I am trying out some recipes for fall since it's finally nice and brisk here - I'n in the mood!
I'm making roasted butternut squash soup garnished with fresh "frittered" sage leaves. I'm kind of combining a couple of recipes. I think it will be hard to mess up with the fabulousness that's in it and an induction blender!
I am also trying out a gluten free flour and a new recipe for a sweet potato pound cake. We always have pumpkin or sweet potato pie but no one really likes it that much so if this is good I'll make it for Thanksgiving instead.
And on a lark, I looked up that old "Watergate salad" (no idea why it's called that) which is not a salad, and is basically a dessert, but whatever - my husband remembered it and remembered liking it so I'm going to give it a whirl. We are having a Midcentury Thanksgiving (traditional food but some midcentury side dishes and a great play list!) so if it's good I'll make it as well on Thanksgiving.
OK, update:
The soup was FABULOUS. Oh my gosh. Roasting the squash and apples and carrots is the key. I also found a new spice mix called Berbere spice - it's Ethiopian based and has cinnamon, cardamom, ginger, garlic, and cayenne pepper in it - WOW! Needless to say, that went into my soup. Instead of sour cream or heavy cream, I drizzled coconut cream/almond milk in it to the side of the frittered sage leaves - wow, it was simply DELICIOUS. Super easy to make too.
Meatless - I used chicken stock but you can use veggie stock as well - in fact, next time I make it that's what I will use because my only complaint, which is very very minor, is that the chicken taste was ever so slightly distracting from the root veggie taste. Regardless, it was still fantastic.
I also made the Watergate salad - which is not a salad, and I don't know why it's called Watergate anything. It has absolutely no nutritional value and is actually really terrible food but dang, it does taste great. Thankfully I will be bringing that to give away somewhere Monday. Get thee behind me, Satan.
Then there was the gluten free sweet potato pound cake. YES. A roaring success! I have attached a photo of the pound cake as well as the particular gluten free flour I used. I will definitely be making this for Thanksgiving instead of the ubiquitous pumpkin pie that no one really likes.
Stopped at CalTort on way back home and had a honey lime burrito, DH got their advertised taco tornado.
Enough credits on my order to get $5.00 off. Pleasant surprise. We got our drinks at home. DH, his beer and I had a glass of the strawberry lemonade.
doing dinner for lunch today, as I'm going to a hockey game with a 5:00 puck drop this afternoon. Pork chops & chinese broccoli with oyster sauce, mashed potatoes. Pears or banana sundaes for dessert.
Tonight is steak night complete with mashed cauliflower and a ceasar salad. I got the cauliflower at Aldi's for .79 this past week so need to eat it before it is brown instead of the color we expect it to be.
Fridge Buffet. Yes it's leftovers again. I want know what all until I'm served.
