I was planning something else, but I think I’ll try the spinach and artichoke ravioli casserole I saw online awhile ago. Think spinach, cheese and artichoke dip, layered with cheese ravioli. Pumpkin roll.

Tonight we're having chicken spaghetti made with a can of Rotel tomatoes, so it's spicy and cheesy. Great comfort food for a cold night! I think we'll also have a tossed salad with it, then some "Watergate Salad" which is not salad for dessert - I made some to try out that old, ridiculous recipe since my family requested it for Thanksgiving, and I have some left over (after taking it to a meeting) because the recipe makes a TON of it. It has zero nutritional value but dang it, it IS good.

Either that or a slice of sweet potato pound cake and a cup of hot tea by the fire! That's more my speed but I bet my husband will want that crazy marshmallow Cool Whip thing.

I just threw together a double batch of mango salsa for a gathering tomorrow. Sneaky me bought a little piece of smoked salmon and ate it with a big spoonful of salsa over it. Incredible!
Mango salsa is so festive looking!
