Tonight's dinner:

Baby Bellas Mushrooms stuffed with sausage
Tossed salad of freshly picked greens
Macaroni and Cheese
Buttered carrots in an orange sauce
Dutch Honey cake

Normally, Monday is leftover day . However, one of my neighbors has been seeking an invite and tonight is her night.

After weeks of complaining about no dinner guests, I am hosting three times this week.

Be careful what you ask for ... the airfare to Tucson can be brutal.

Started tonight for lunch and dinner tomorrow:


Farm style (not ranch..big difference) chicken soup with cabbage, taters, onions , yellow squash and noodles. This is what I do when I gotta make room in the fridge, cupboards and freezer. Stew up what might spoil otherwise and freeze whats left after everyone chows down.


Soups and stews are great for that sort of intent. Whatever meats you might use be it beef , chicken ,pork whatever even if it' a little freezer burned will still stew up very tasty. I despise seeing food go to waste. Soup, stew, chili etc is flat easy to make and will make meals for multiples to stretch.


So, probably for at least a week or two there will be delicious, nutritious soup to go with sheepherder bread and nobody walks off hungry.
