My husband was out of town for Valentine's Day so we are celebrating tonight. Unfortunately, I gave up liquor for Lent, so I can't have any wine with my meal! It is going to be a long 40 days, people! My husband joked that I'd better skip the sip of wine at Mass as well as he would be afraid that I'd drain the chalice. Anyway, tonight we are having:
crab-stuffed filet mignon with a peppercorn sauce (usually, I make a whiskey peppercorn, sauce, sigh); roasted red potatoes; grilled asparagus and white chocolate cheesecake for dessert.
Last night's dinner I worked on with my husband. Here is the spinach, strawberry, kiwi, gorgonzola and sunflower seed salad. I made the salad, the husband made a raspberry vingerette to serve with it.
The husband made the rack of lamb rubbed with ras el hanout. He made a shiraz, honey and balsamic reduction to serve with it.
And here it all is including the apricot rice pilaf I made. Of course Blitzen is supervising again!
Tonight will be leftovers or maybe take out pizza.
magicshark, everything looks wonderful. Was there a place setting for Blitzen? I think we will have a rack of lamb for Easter this year.
I need to learn how to make smaller batches of stuff.... we are still on leftovers and I am sick of them. Froze what could be froze.
