We made a "quiche" the other night with frozen hash browns instead of a crust. Made it southwestern-style with sauteed onions, jalapenos, and some tomatillos that needed to be used. Then we used some sour cream plus milk with the eggy part, plus sharp cheddar. Baked for 45 minutes, and it was great with a small salad and some rye with a little cured salmon and cream cheese. (You could easily add cooked sausage or bacon to this egg concoction, and I added some green salsa on top). I ate all the leftovers over the next few days, which reheated well. Sometimes I love eggs for dinner!
