You can cook a poaced egg in about three minutes in the micro. Pop it between halves of a whole wheat muffin, with perhaps a slice of cheese, and you have a quick breakfast.

1 egg
One shallow bowl or coffee cup
1T or so water

Put water in bowl. Crack egg into bowl. Prick yolk gently with fork.

Place in micro. Zap for 3-3 1/2 minutes at low power. Check for doneness, and if necessary, zap for a few more seconds.

Make sandwich.

You can also pre scramble the egg before cooking. You can certainly toast the English muffin before making the breakfast sandwich.

You can also try almond butter on toasted whole wheat bread. If you want, you could slice banana on top.

Try a quick scrambled egg rolled in a warmed tortilla.

Buy dried apricots and eat with vanila yogurt.

Try a handful of mixed nuts and a few pieces of dried fruit. (Shake off excess salt if the nuts are salted)

I always keep some hard boiled eggs in the fridge to add some protein to a quick breakfast.

Whole Grain Toast w/ Chunky Peanut Butter.
A Low Fat Granola Cereal w/ Added Fruit--cut up peach or apple in it.
Whole Grain Waffle w/ Strawberries on it and Real Maple Syrup.

They're all pretty fast and healthy, too.

Hash browns. Shred the potatoes the night before and wring out the extra liquid. In the morning, heat a little oil in a griddle and fry up those hash browns. Takes about ten minutes. Add a egg or two and you have a quick, hearty breakfast.

Edit: You can also make pancake batter the night before and keep it in the fridge. I always use Martha Stewart's yeast recipe. https://www.marthastewart.com/340301...aised-pancakes It rises a little overnight in the fridge. The taste is amazing.
