sheena12, I make St. Patrick's Day soup.

It was based on a recipe of vegetarian crockpot recipes published in 2004. The word "vegan" does not appear in the book, but some of the recipes are indeed plant-based.

One such was a French white bean and cabbage soup that called for one grated potato. Yeah, OK. ONE potato? I think not.

I added quartered red potatoes and smoked salt and called it St. Patrick's Day soup. Made it yesterday for my vegan daughter and her vegan roommate.

I always have corned beef and cabbage with potatoes. It's three of my favorite foods.

I also make soda bread, but I make that pretty often, since it's so easy and good.

This year, my MIL had a whiskey tasting, so I made a dessert to go with that...a Guinness and dark chocolate cake with a whiskey-chocolate ganache. It turned out great.

The whiskeys chosen for the tasting were Michael Collins, Jameson Black Barrel, Bushmills, Jameson 12-year Special Reserve, and Tullamore Dew.

I made shrimp & boneless chicken thigh gumbo over basmati rice for dinner. I use a good smoked Andouille sausage and More Than Gourmet fish stock reduction but it's otherwise a pretty vanilla gumbo recipe. Not exactly Irish food.

We had lunch at an on-mountain restaurant at the ski area. They have a signature lamb stew-based shepherds pie. I had that and a Guinness. My girlfriend had a Reuben and Irish Coffee. I had a bite of that, too. I coaxed the shepherds pie recipe out of the resort's executive chef a few years ago. The secret ingredient is port and a lot of fresh ground black pepper at the very end. You get the sweet from the port and the heat from the black pepper.

Would you post that cake recipe? I've had chocolate cake with whiskey, but not Guinness. I love corned beef, but all the Irish I know would, like me, prefer to try that cake.
