Knudsen used to carry a large curd cottage cheese - it was the one in the turquoise tub. I haven't seen it in ages. Maybe some other brands still produce large curd variety?

I think if you stick with a true dairy product, one that doesn't have stabilizers, gums, and unpronounceable ingredients, then you will get proper curds.

We get the huge tub of the Knudsen's low fat cottage cheese at Costco for $4.99 all the time, and it is properly curd-like.

Have you tried draining the cottage cheese in a fine-mesh strainer or in cheesecloth? That might reduce the moisture content enough to improve the texture.

There used to be choices. Breakstone had something like small curd and "California style curd." Other brands had small and large curds too. I don't see that any more.

I think Daisy has a lot of curds, although there is quite a bit of liquid, too. I just drain off the excess.

Take cottage cheese, drain the whey, add cream, and you have a pretty good makeshift burrata.
