I love a cheese plate, with room temp, quality cheeses. Add some fresh scallions & fresh tomatoes, & call it dinner. perfect in the summer heat.

Cheddar is one of my top. I use it on eggs, different recipes or just eating by itself.
Cheddar is a known teeth cleaner too.

Another cheese I like is brie. Melted on crackers...yum!

Why would anyone not like cheese?!

I love the kerrygold cheeses, or any Irish or British cheddar or other cheeses. Neveer met a cheese I didn't like.

Leave it out for awhile to let it come to its best consistency. I try to aim for overnight, but I never quite make it. The softer, the riper, the better. I like it best with crusty bread, not crackers.

I leave mine out overnight. I like it best with a baguette but if I forget to buy it, I'll eat the cheese right off the knife. Or, um, off my fingers. It's St. Andre -- it stands on its own. *love*
