I also like the Costco Trident fish sticks, thye are whole pieces of fish, not minced fish. But if you don't like fish, why bother, get a cheese stick or a chicken nugget.

What else should be the first ingedient in FISH sticks than fish?
Chicken? sugar? breading? More breading than fish?

Fish sticks seems to me like one of the most standardized food products ever. They all have the same size, they weight the same, they have the same fish content, they cost the same (with the exception of name brand fish sticks). And beside the breading they all taste the same.
Where I live fish sticks contain 65% fish. It's probably regulated by some act. Allegedly fish sticks in Eastern Europe contain less fish, just 58%. Not sure whether this is true. It's maybe just a conspiracy theory of EU sceptics from Eastern Europe

That fish sticks contain minced fish is a myth. Independent consumer protectors and consumer assistance offices constantly clarify that fish sticks doesn't contain minced fish. But some people still believe this nonsense
I'm not a foodie, but I'm absolutely sure I could spot the difference in texture between fish fillet and minced fish.
If you end up in a nursing home, toothless and without any culinary choices, they'll probably feed you fish sticks. But why punish yourself, before that time?
when I was in my 30's, I went to pick up a guy early one morn for a Trout Fishing trip. he was a Bud from our Military Service days.
Walked in, he was passed out on the couch..on the kitchen counter was a warm bottle of beer and a plate of Fish sticks in front of his toaster oven around 2 am.
He fell asleep before he put them in the oven.
He got up, got his gear together, looked over at the Fishsticks on the counter and said;

You can make your own fish sticks with tilapia because it has no taste whatsoever. Trout is also somewhat bland. I hate fish sticks because they're made of minced fish scraps and the texture alone makes me unhappy. I wouldn't even eat them when I was a kid.

The Costco ones aren't; they're made from whole fillets.
Try Gorton's Pub Style Beer Batter Cod. They aren't like regular fish sticks and at least to us, don't taste at all like typical (imo icky) fish sticks.
Buy breaded fillets of cod, haddock or sole. Fish sticks are made of minced fish, usually pollock or some other cheap, easily available fish.
You'll pay a couple dollars more per/lb. but you'll get a mild-tasting fish that takes well to lemon or vinegar and tartar sauce.
