I was remembering my favorite uncle the other day, and I remembered that he used to get up very early on days when he went hunting or fishing. On those days, he would brew (actually perk) up some strong coffee and when it was brewed, he would take a mug, break a raw egg into it, mix it up well and then add the hot coffee. Then he would add milk.
He was born in the "old country" (Belgium) where this may have been common. I have never seen anyone do that since. He used to have me taste it but honestly I dont recall if I liked it or not.
THis is not to be confused with what is known as Swedish coffee, where coffee grounds are mixed with eggs.
I plan to try it again, if for no other reason that it would be nostalgic. Have any of you ever heard of this brew?

I believe in experimentation but at my age me thinks I’m done with hunting and will continue me coffee with just heart protecting chocolate in it This is the first time I have heard of such a breakfast hack.
When I'm using the old fashioned perk coffee maker I mix my coffee grounds with enough egg to hold the grounds together. Crush the shell and mix it in. The calcium in the shell will help break up the acidity of the coffee. This gives it a richer flavor. Bring the water almost to a boil and gently put the egg/coffee mix into the water. When the coffee is done you'll be able to scoop the egg/coffee ground mix out of the pot in one piece. Even the last cup poured seldom has grounds.
